Step:

  1. In a large pot, immerse the potatoes and garlic in water.

  2. Boil until the potatoes are fork tender, about 30 minutes.

  3. Fry the bacon in a skillet until crisp.

  4. Drain on paper towels.

  5. Pour out all but 1 teaspoon of the bacon drippings from the pan.

  6. Add the green onion to the drippings, and saute' until soft but not brown.

  7. Return the bacon to the skillet and stir to combine.

  8. Drain the, potatoes and garlic and return to the pot.

  9. Mash the potatoes with the milk, sour cream, salt, and pepper.

  10. Stir in the bacon and green onions.

  11. Reheat, if necessary, before serving.

  12. *If you have already cooked bacon, saute' the green onions in a bit of butter in place of the bacon drippings.*

  2. 5 slice bacon, cut into 1/2 inch pieces
  3. 2 lb potatoes, peeled and cut into 1 inch cubes
  4. 1 cup very thinly sliced green onions
  5. 1/2 cup milk, warmed
  6. 1/2 cup sour cream
  7. 1/2 to 1 teaspoon salt
  8. 1/4 tsp pepper
