Step:

  1. Preheat 350 degrees

  2. In a bowl, stir together all ingredients (except pecan halves)

  3. Line a mini muffin tin with liners & spray with Pam spray.

  4. Fill each mini muffin tin 2/3 full with batter. Top each with pecan half.

  5. Bake at 350 degrees for 12-15 minutes or until golden brown.

  6. Makes 2 1/2 dozen mini muffins.

Ingredients

  1. 1 cup light brown sugar
  2. 1/2 cup all purpose flour
  3. 2 eggs beaten
  4. 2/3 cup melted butter
  5. 1 cup chopped pecans
  6. 1 tsp vanilla extract
  7. Additional pecan halves (optional)
