Add bubblegum truvia and caster sugar to a big pan and mix until sugar has dissolved. It will fizz up a bit but will soon calm down. When clear, set aside to cool down in a jug.
Mix baileys and liquid glucose in a big mixing bowl that will fit in your fridge.
Pour bubblegum mix in baileys mix and stir. Pop in fridge for 30+ minutes to completely cool
Give it a stir then put ice cream maker on paddles turning pour mixture in and leave to run for upto 58 minutes. Keep checking after 50 minutes as it will come to the top.
When ready switch machine off take paddles out and put in containers to keep in the freezer. I hope you like it as much as I do.
Serve in a glass on its own with a straw or pop a bit of baileys on top.

1000 ml barrs bubblegum pop
50 grams truvia sugar alternative 0 calories
30 grams caster sugar
80 ml Baileys irish cream or like brand
15 grams liquid glucose
