Step:

  1. Grate the cheese. DO NOT USE PROCESSED GRATED Cheese. It does not soften. Add in 1 1/2 cups mayo; add in slowly to see if you need the whole amount. Mix in the rest of the ingredients. Don't over mix. Use a fork. Let set overnite to blend.

  2. I have used extra sharp cheddar cheese for entire recipe and it's awesome!

Ingredients

  1. 1/2 lb sharp cheddar cheese ( cracker barrel)
  2. 1/2 lb extra sharp cheddar cheese (cracker barrel)
  3. 1 1/2 cup mayonnaise
  4. 1 jar diced pimentos., drained
  5. 1 to 2 Tbsp onion juice
  6. 1 tsp salt
  7. 1 tsp ground black pepper
  8. 1/2 to 1 teaspoon white pepper
  9. 1/2 to 1 teaspoon cayenne pepper
  10. 1 jalopeno peppers, chopped; if desired
