Step:
Heat oil in a medium skillet on medium-high heat.
Sprinkle salt and pepper all over the pork loin.
Sear the pork loin on all sides in the skillet.
You're done with the skillet. **Shut it off and transfer the pork to a cutting board.
Thinly slice garlic cloves and half of the onion.
Make small slits on the top of the pork loin and stuff each slit with garlic clove and onion slices.
In the crockpot mix the water, dry onion soup mix, cream of mushroom soup, bay leaves, salt and pepper, and italian seasoning.
Turn the crockpot on high and place the pork loin in. Baste the top of it with the soup and cover.
Cut your potatoes, carrots, and remaining onion and toss them in with the roast.
Cook on high for 4 to 5 hours until the pork loin is throughly cooked and the proper internal temperature is reached.
To make the roast extra moist and delicious, baste it every half hour with the soup mix.
To make a thicker gravy, place some of the soup mix into a skillet and add a tablespoon or two of cornstarch and heat until thickened.
