Step:

  1. Cut the tomatoes into 1/4 inch pieces, making sure to save the juices too.

  2. Transfer the tomatoes and juices to a serving bowl and stir in the remaining ingredients.

  3. Add extra seasoning to taste if you feel it's necessary, by adding more salt or lemon juice.

  4. The relish should have a tart flavor and be well seasoned.

  5. Serve within a few hours of making.

  6. *Make sure you use juicy, red, ripe tomatoes.*

Ingredients

  1. 2 ripe tomatoes
  2. 1/2 medium red onion, finely chopped
  3. 3 tbsp chopped fresh parsley
  4. 3 tbsp (or more to taste) fresh lemon juice
  5. 1/2 tsp pepper
  6. 1/4 to 1/2 teaspoon course salt (sea or kosher)
  7. 1/2 to 2 Scotch bonnet or habanero chilies, seeded and minced (for a hotter relish, leave the seeds in)
