Cut the tomatoes into 1/4 inch pieces, making sure to save the juices too.
Transfer the tomatoes and juices to a serving bowl and stir in the remaining ingredients.
Add extra seasoning to taste if you feel it's necessary, by adding more salt or lemon juice.
The relish should have a tart flavor and be well seasoned.
Serve within a few hours of making.
*Make sure you use juicy, red, ripe tomatoes.*
**This is recommended for lamb or beef, but my friend used it with chicken.**
***This recipe makes about 2 cups, which should serve 4 to 6 people.***

Ingredients
2 ripe tomatoes
1/2 medium red onion, finely chopped
3 tbsp chopped fresh parsley
3 tbsp (or more to taste) fresh lemon juice
1/2 tsp pepper
1/4 to 1/2 teaspoon course salt (sea or kosher)
1/2 to 2 Scotch bonnet or habanero chilies, seeded and minced (for a hotter relish, leave the seeds in)
