Step:

  1. Combine uncooked quinoa, water, and salt in a medium saucepan. Bring to a boil, cover, decrease the heat, and simmer for 25 to 30 minutes, until the quinoa is tender and you can see the little quinoa "curlicues."

  2. Cooked quinoa stays fresh for up to 6-7 days in the refrigerator or 8 months in the freezer.

  3. 1 cup dry yields about 3 cups cooked.

  2. 2 cup water or stock
  3. 1/2 tsp salt, if preferred
