Step:

  1. prepare noodles according to package directions.

  2. saute mushrooms, carrots, and garlic in oil for 5 minutes. add green onion bottoms and continue to saute until mushrooms are tender, about 3 minutes more.

  3. meanwhile, combine peanut butter, vegetable broth, soy sauce, sriracha, and red pepper flakes in small bowl.

  4. add peanut sauce, bean sprouts, and cooked rice noodles in saute pan. heat until warmed through.

  5. garnish with chopped peanuts and green onion tops.

  1. 1 packages rice noodles (14 ounces)
  2. 4 portobella mushrooms, gills removed and sliced
  3. 1 1/2 cup matchstick carrots
  4. 1 tbsp olive oil
  5. 1 clove garlic, minced
  6. 4 green onions (spring onions) sliced on the bias, green tops separate from bottoms
  7. 1/3 cup creamy peanut butter
  8. 1/3 cup vegetable broth
  9. 1/3 cup soy sauce
  10. 1 1/2 tbsp sriracha
  11. 1/2 tsp crushed red pepper flakes
  12. 1 cup bean sprouts
  13. 1/2 cup chopped peanuts
