  1. Put a 12" pan on the stove on medium heat.

  2. Use a nonstick spray like Pam to coat the pan.

  3. Add bacon to the pan.

  5. Line a plate with paper towels.

  6. Add bacon to paper towel-lined plate.

  7. See the bacon grease (A.K.A. Heaven's gift to humanity)? Yeah, just leave that in there and lower the heat to low. (This will prevent pattering when the scallops hit the pan.)

  8. Add the scallops to the pan.

  9. Turn the heat to medium-high.

  10. Season the scallops with pepper and salt.

  11. When the scallops are heated through and turn more opaque, drain the liquid and return the pan with the scallops to the fire.

Ingredients

  1. 6 slice thick cut bacon
  2. 1 1/2 lb bay scallops
  3. 1 pepper, to taste
  4. 1 Mediterranean sea salt, to taste
  5. 1 1/2 tsp minced garlic
  6. 4 bunch fresh field greens and spinach, 1 bunch per bowl
  7. 6 dash lime juice
  8. 8 dash balsamic vinegar (I used vinegar aged 18 years)
