Step:

  1. Boil whole sweet potato in water for about 10 to 12 mins.

  2. Let the potatoes cool down. Then peel and small dice and toss in a small bowl.

  3. Add all other ingredients into the bowl, and toss with the oil and then add salt and pepper to taste.

Ingredients

  1. 2 each Sweet potatoes
  2. 1/3 chopped red onion
  3. 1 tbsp chopped garlic
  4. 1/2 bunch Fresh cilantro
  5. 1 each serrano chili pepper minced
  6. 2 tsp Ground cumin
  7. 1 salt and pepper to taste
  8. 1 each Fresh Lime
  9. 1/4 cup olive oil or whatever you prefer
  10. 1 each tomato, diced
