Step:

  1. In a medium saucepan over medium-low heat, add canola oil, jalapeno, garlic, sesame seeds, and cumin seeds. Saute for 10 minutes stirring occasionally to toast seeds and flavor the oil.

  2. Remove the jalapeno and set aside. Increase the heat to medium and add the carrots and ground pork. Cook until pork is completely cooked through, then remove as much of residual fat as possible.

  3. Stir in curry paste, coconut milk, salt, and peas. Return jalapeno and simmer entire mixture for 10-15 minutes over medium heat.

  4. Serve over white rice.

  3. 3 clove Garlic (smashed)
  4. 1/4 tsp Cumin Seeds
  5. 1/4 tsp Sesame Seeds
  6. 2 large Carrots (1/4-inch slices)
  7. 1 lb Ground Pork
  8. 2 tbsp Patak's Hot Curry Paste
  9. 14 oz Thai Kitchen Light Coconut Milk
  10. 1 tsp Salt
  11. 1 1/3 cup Frozen Sweet Peas
