Step:
Mix the flour, sugar, baking powder, xanthan gum if using and salt in a bowl
In a cup mix together the baking soda, 1 tbsp milk, vanilla and the vinegar to make a fizzy leavener
Make a well in the flour and add the rest of the milk and the vinegar mixture, stirring until a smooth doughy batter is formed
Fold in the blueberries. It's okay if some break or mash while stirring. Let the dough stand a minute while you heat the oil in a frying over medium heat
Turn the heat down to medium low and drop in the dough by tablespoon, cooking for about 2 minutes per side, until lightly browned. Bubbles will s5art to pop on top when they'recready to turn. 3 at a time is plenty and it's a good idea to do a test one to make sure your oil is at the right temp and to adjust the cooking time so the middle is cooked through
When cooled dust in powdered sugar or make a glaze from powdered sugar and a little milk. Yummy!
Serves 4 people, 3 fritters each
Ingredients
120 grams gluten-free / plain flour
4 tbsp granulated sugar
1 tsp baking powder
1/2 tsp salt
1/8 tsp xanthan gum if using a gluten-free flour blend
1 tsp bicarb / baking soda
150 ml milk alternative such as rice / coconut milk etc plus 1 tbsp
1 tbsp white or cider vinegar
1/2 tsp vanilla extract
200 grams fresh blueberries
4 tsp oil
powdered sugar for topping
