Using small pan, still all seasonings together making the sugar has melted into sticky, thick sauce. Let it cool before adding to the mince pork
Put all the seasoning into the mince pork. Mix it until combine and let it marinate overnight in the fridge.
Preheat the oven 100 C. Prepare a baking sheet large enough to fit into the oven.
Take about 500 g of mince pork each time and place in the middle of the baking sheet. Cover with a large sheet of plastic or plastic wrap before using the rolling pin to flatten the minced pork into a large thin layer.
Use a spoon dipped in some cooking oil to smooth those parts that uneven.
Bake at 100 C for 60 - 90 minutes. Just in case the minced meat mixture drippings, put an oven tray resting at the bottom of the oven.
The cooked meat should be nice and dry. When it is cool enough to handle, cut each sheet of meat into 6 pieces.
Turn on the grill 200 C, transfer the meat and parchment paper to a broiler pan and grill for 5 minutes.
Remove from oven. Flip slice of meat over with a pair of tongs. Return pan to the oven for another 5 minuutes.
Remove and cool completely on a wire rack.

300 g sugar
1/2 tsp five spice powder
1 tbs chinese cooking wine
2 tbs oyster sauce
6 tbs fish sauce
3 tbs light soy sauce
1 tbs sesame oil
3 drop red food colouring
