Step:

  1. Preheat the oven 180 C

  2. Lightly coat 24 mini muffin tin

  3. In a large bowl combine flour, cornmeal, baking soda and salt.

  4. In the other bowl whisk together buttermilk, sugar, melted butter and egg.

  5. Pour mixture over dry ingredients, and stir until moist.

  6. Scoop 1 tbsp batter into each cup and place 1 hot dog into the centre.

  7. Bake the muffin for 8 - 10 minutes or until cooked and golden brown

  8. Serve with ketchup and mustard.

Ingredients

  1. 1/2 cup flour
  2. 1/2 cup yellow corn meal
  3. 1/4 tsp baking soda
  4. 1/4 tsp salt
  5. 1/2 c buttermilk
  6. 1/4 cup sugar
  7. 1/4 cup unsalted butter, melted
  8. 1 egg
  9. 6 beef franks, cut into 2 inch pieces
  10. Ketchup and mustard for serving
