Step:

  1. Leave the butter at room temperature until it melts.

  2. Boil the almonds and remove their skin, then finely chop them either using a knife or passing them through a blender (depending on the texture you want to have). 

  3. Place the butter, the sugar and the almonds in a bowl and mix. Add the flour little by little until you have a well incorporated dough that doesn't crack or that it isn't too soft. 

  4. Take a piece of the dough and roll it out about 1 1.2 cm thick. Using a wine glass or the coupe-pate of your liking cut out the dough and place the pieces into a large baking tray. 

  5. Bake in a moderate preheated oven until golden brown. 

  6. As soon as you take them out of the oven, sprinkle with the orange flower water and place them in a small bowl with the icing sugar. Let them cool for a while and then place them in a platter sprinkling each layer with icing sugar.

  2. 2 tbs icing sugar 
  3. 1/3 cup almonds (unshelled) 
  4. As much flour as it takes (about 1kg)
  5. Orange flower water 
  6. Icing sugar for sprinkling
