Lobster Mac and cheese

Preheat even to 350

Cook the macaroni as package instructs. Using a double boiler, melt the cheddar cheese, 4oz of parmesan cheese, cream cheese and Gruyere cheese until blended. Add the cream gradually, stirring until smooth.

Heat the oil in a large pan on medium. Saute the shallot and garlic for 1-2 min. Add lobster and cook until opaque. Now add the pasta to the lobster mix and pour in the cheese sauce. Add the S&P and mix well.

Put the mixture into a sprayed casserole dish and top with remaining parmesan cheese. Bake for 6-8 minutes and serve hot.
