Step:

  1. Cut pork into thin strips

  3. Combine in a bowl the 4 tablespoons tamai, cornstarch, mirin, ginger and sriracha. Add pork strips and coat with sauce Cover and marinate 30 minutes

  4. In a small skillet heat 1 teaspoon butter, add eggs, cook until set then remove to a plate. Cut into thin strips and reserve

  6. In a small bowl combine broth, hoisen sauce, oyster sauce, rice vinegar and sriracha sauce

  7. In a wok or large skillet heat chili oil and add pork and brown, removing to a plate as done

  8. Add mushrooms bamboo shoots and onions and cover until soft,remove cover

  9. Add slaw, broth mixture and pepper to taste, cook quickly on high, stirring until liquid is almost gone. Turn off heat and add reserved egg strips, cooked pork and green pen onions.

  13. Make Manderin Sauce

  14. Combine all sauce ingredients in a bowl and whisk to combine

  15. Make Manderin Pancakes, They should be made before the Moo Shu Pork so they will be ready

  16. In a bowl mix flour, water, sugar and asian seasoning until a shaggy dogh forms

  17. Turn out onto flouted surface and kneed until smooth, about 3 minutes

  18. Roll into a 12 inch log, cover with plastic wrap and let sit 5 minutrs

  19. Cut into 12 slices

  20. Roll each slice into about an 8 inche thin circle

  21. Brush one side of each circle lightly with seasame oi

  22. Sandwich 2 pancakes together with seasame oil sides inside. The outside will be dry

  23. Spray a 9 inch skillet with non stick spray and heat to medium high. Add 1 pair of pancakes cooking just until each side is dry, and a spotty goldem. Remove from skillet, carefully peel them apart while hot and stack between parchment paper

  26. Have everyone take a pancake, add a thin layer of Manderin Sauce on pancake

Ingredients

  1. Z For The Moo - Shu Pork Mixture
  2. 1 whole pork tenderloin, trimmed of any silver skin
  3. 1/4 teaspoon ground ginger
  4. 4 tablespoons tamari soy sauce
  5. 2 teaspoons cornstarch
  6. 2 teaspoons mirin
  7. 1/2 teaspoon sriracha seasoning
  8. 4 cups assorted mushrooms including shitake and portabella
  9. 4 cups asian slaw mix
  10. 4 large eggs lightly beaten and seasoned with asian seasoning
  11. 1/2 cup sliced bamboo shoots
  12. 1 onion, cut into thin strips
  13. /4 cup pork or chicken broth
  14. 1 teaspoon hoisen sauce
  15. 1 teaspoonrice sesoned rice vinegar
  16. 1 teaspoon oyster sauce
  17. 1/2 tablespoon hot chili oil
  18. 1 tablespoon sriracha sauce
  19. 4 green onions sliced
  20. sesame oil for brushing
  21. For Manderin Sauce
  22. 1 tablespoon light brown sugar
  23. 1/2 cup hoisen sauce
  24. 1/4 teaspoon granulated garlic
  25. 1 tablespoon tamari soy sauce
  26. 1 tablespoon sriracha sauce 1
  27. 1 1/2 tablespoons seasoned rice vinegar
  28. For Maderim Pancakes
  29. 1 3/4 cup all purpose flour
  30. 3/4 cup boiling water
  31. 1 .teaspoon granulated sugar
  32. 1 teaspoon asian seasoning
  33. to taste black pepper
