Step:
In a mixing bowl take the flours. In a mixture jar make a green paste using coriander leaves, green chillies, garlic cloves, ginger and coconut. To make the paste smooth add some water if required. Now add this ready green paste to the flours and all the other ingredients mentioned for the batter also.
Mix everything properly and make thick batter. Keep this mixture aside for some time. Wash all the Arbi leaves with water and dry them with a cloth. Remove the veins if they are thick.
Take single Arbi leaf and apply the ready batter on it's surface as shown in the picture. Similarly place two more leaves one above other a little away on the single leaf after applying the batter.
Now fold both the sides of the leaf in such a way that the touch the centre ofall the leaves. Then fold 1/3rd of the folded part from the above of the leaves. Again apply a little batter on the folded part and roll it tightly. Similarly make the other rolls. Steam these rolls in a steamer for around 15 minutes.
Once cooled cut the rolls into pieces. In a nonstick pan take oil for tempering. Add cumin and mustard seeds to it and heat it. When mustard seeds crackles add asafoetida, chopped onions, chopped green chillies and curry leaves to it. When the onion becomes pinkish add all the spices to it and mix well.
Now add the pieces of Arbi leaves rolls to it and cook one side then flip it over and cook the other side.
Serve the ready Patra with tomato ketchup or green chutney.
