Step:

  1. In a Dutch Oven, heat up vegetable oil on high heat. Once hot, Add the red onions and cook for 4-5 mins or until tender, but not caramelized. Add the garlic, ginger paste, curry, garam masala, half of the salt and red pepper flakes. Cook for 2 minutes. Add the tomatoes and cook another 4-5 minutes. Add the sweet potatoes and cook another 4-5 minutes. Add chicken broth and bring to a light boil then immediately reduce heat to a simmer. Let simmer with lid on for 15 minutes.

  2. With an immersion blender, pure the soup until you reach a coarse-fine texture. It shouldnt be completely smooth, but there shouldnt be large chunks either. Add/Mix cream. Ready to serve with some Naan, tortillas, bread or I even like to throw on whole grain baked gold fish as croutons (really, lol).

  1. 5 T Vegetable Oil
  2. 250 Grams diced Red Onion (1 Medium Size)
  3. 15 Grams Chopped Garlic (2 Cloves)
  4. 20 Grams Ginger Paste
  5. 3 Tablespoons Curry Powder
  6. 1/2 Tablespoon Garam Masala
  7. 2 1/5 Teaspoons Salt
  8. 1/2 Tablespoon Red Pepper Flakes
  9. 335 Grams Fresh Diced Tomatoes (3 Medium Tomatoes)
  10. 585 Grams Cooked (Microwaved) Sweet Potatoes (2 Large) Cut Into Small Cubes
  11. 4 Cubes Chicken Bouillon Dissolved in 4 Cups Hot Water
  12. 65 Grams Heavy Whipping Cream
  13. 1/2 Teaspoon Black Pepper
  14. Fresh Chopped Cilantro (Ive never added, but may be a nice addition)
