Use a heavy saucepan, ceramic is ideal - I use a Le crueset
Pour in enough oil to just cover the base of your pan. Then add a handful of corn kernels, also enough to just cover the base of the pan in a single layer. Now sprinkle the salt over the kernels.
Heat on a medium high heat. as the corn pops gently shake the pan to stop the popcorn scorching on the base.
When the popping slows to every 4-5 seconds, pull off the heat and let it sit for a few minutes to make sure the popping has stopped.
Dredge the popcorn with caster sugar and serve in a big sharing bowl.
