Step:

  1. Only add salt after tasting at the very end of cooking: the pickles are very salty!

  2. Chop everything up and dump them all in your cooking vessel with a little water. Stir-fry on very low heat until everything breaks down.

  3. Best eaten in a burrito (chapo wrap) with pico de gallo (kachumbari).

Ingredients

  1. 2 cups boiled njahi (make sure its done properly)
  2. Trio of pickled capers, green and black olives
  3. 3 tablespoons cooking oil
  4. 4 pieces small eggplants
  5. 3 tomatoes
  6. 1 large onion
