For the dough: In a large bowl add wheat flour and Suji add oil and crumble the flour. Add salt, kasuri methi and water required to make a semi-soft dough.
For fried ghobhi: Boil water for 3-4 min on high flame and put flower of ghobi boil it for 1 minute and leave it in water for the next 2-5 minutes. Drain all water and leave gobhi for overnight to evaporate all water.
In a pan hot the oil add peas fry for 2 minutes add large chopped potato and cauliflower till light crispy brown. Take everything on absorbed paper.
Take 2 tsp oil in the same pan add coriander, onion and ginger garlic paste saute them when the onion starts changing it's colour add tomato puree.
Add all spices with 2 tsp of water and mix them together to cover the pan for 2-4 minutes to mix everything very well.
Add fried veggies in cooked masala, coat them very well and cover the lid for 10 minutes. After that add green coriander leaves or Kasuri methi.
Take lemon size dough. Roll into ball, flat with rolling pin. Make sure neither it's not very thin or thick otherwise it will not puff up.
