Step:

  1. Chop up the ingredients specified above. Usually I’m in a hurry and I may give the onion, carrot, garlic and chillies a quick spin in the mixer grinder (no water), so that it chops up fine, retaining enough texture.

  2. Mix it up with the eggs, besan and maida. Use milk to mix it all up so that the mix is a little runny. Pro tip: Don’t bother mixing every bubble of maida, leave it overnight in the fridge, it will come together nicely. Mix it up next morning just before frying.

  3. Oil your tawa with ghee/refined oil (use a brush to control the oil)

  4. Ladke out 2-3 scoops of pancake mix and twirl your tawa around so it spreads equally

  5. Each side take about 3-4 minutes. No need to oil when you flip.

  6. And it’s ready to eat, serve with mayo and tomato sauce or your favourite chutney.

Ingredients

  1. 4 eggs
  2. 1 onion chopped finely
  3. 4-5 garlic cloves grated
  4. 4-5 hot green chilli chopped finely
  5. 1 carrot chopped finely
  6. 150 gm besan/gram flour
  7. 150 gm maida/All-purpose flour
  8. as needed Milk
  9. to taste Salt
