Chorizo and mushroom Quiche

Place the crust in a round baking dish and dock it with a fork and prebake for 10 min to set

In a saut pan cook the chorizo,mushrooms and shallots.

In separate bowl, whisk the eggs and cream and add the salt and pepper

Remove the crust from the oven and add the chorizo mixture top with mozzarella and the egg mixture.

Place in the oven and bake at 180F for 35 min. The center should come out clean.
