Bread and butter muffins

Soak raisins in rum for about 20 minutes

Cut bread in small pieces. Warm the milk with cinnamon and bring to the boil. Soak bread with flavoured milk for 30 minutes

Prepare muffin trays by greasing and coating with fine dry breadcrumbs.

Pre heat oven to 180°C

Add drained raisins to bread mixture. Add lemon zest and beaten eggs

Fill prepared muffin tin with mixture

Bake for 30-35 minutes. Eat warm or at room temperature.
