For bean balls, mash the beans.
Reduce the beef broth until it is very concentrated and mix into the bean mash.
Slice the onion and caramelise it in oil, then mix into the mash.
Add all the other ingredients to make the final mash. If it is too soft, add some extra mashed beans to solidify it. Check seasoning.
Make balls and bake in the oven till well set. (Remember all the ingredients except egg are cooked so you don't need much time).
For the ratatouille, suet the minced ginger in some oil.
Blend the tomatoes and add to the ginger.
Add the herbs, spices and seasoning.
Boil until the tomato sauce reduces to a thick liquid.
Add the cubed carrots and cook until a bit soft.
Add the zucchini and cook for a few minutes.
For maize pancake, blend the maize in the milk.
Mix with wheat flour, salt, and water to make a very thick batter.
Cook the maize batter in a pan like pancakes.
Combine the components by putting the bean balls and maize pancake on the plate and taking some of the tomato sauce from the ratatouille to coat the bean ball then the vegetables to the side.
Or you can flatten the bean balls and make a vegetarian burger. Here I made a sandwich by using two slices of the maize pancake, putting a flattened bean ball in the middle, and putting the ratatouille tomato sauce as sandwich dressing.
