Chop sausage into small slices and season with garlic and seasonings. Place Im baking sheet and bake covered about 20 min so juices collect
While sausage is baking, dice onion, green pepper and celery together and combine in crockpot with rinsed beans.
Toss sausage with juices in the pot and stir. Add ham or neck bone and Tasso (optional)
Then add water and chicken broth or just water just till you see it about level with the beans
Cover and cook on high for 6 hours (stirring every hour or two). After about 6 hours you can drop heat to low and cook another hour or two. You want the beans to soften and start thickening the juices when stirring.
Season more if desired. Add in parsley and stir. serve over rice and enjoy!
Ingredients
1 bag dry red kidney beans (soaked overnight and rinsed)
1/2-1 green bell pepper
1/2-1 onion
2-3 stalks celery
1 tbsp garlic
2 pkgs andouille sausage
1-2 Ham bone or neck bone
1/2 cup diced Tasso salted pork (optional off you have)
1 tbsp Tonys seasoning or similar
1 tbsp garlic powder
1-2 tsp cayenne pepper
2 tsp black pepper
1/2 cup Parsley
Water (combine with chicken broth if desired)
