Step:
A - Heat 1 C of oil in a deep frying pan. Fry anchovies until crispy or until anchovies turn to lightly brown. Remove and drain. Set aside.
B - Prep B. Slice all ingredients (except brown onion) at a slight angle to make them appear bigger or 'longer'. Slice brown onion into rings.
Cooking the dish - Heat up 2 - 3 tbsp of oil in a wok or deep frying pan. Add brown onion, saut quickly for a minute or less. Stir in the rest of sliced ingredients in B. Season with C. Saut for a minute or two, then turn the heat off. Add fried anchovies. Stir to mix everything. Dish up.
Note: Can be used in fried rice. Prepare left over rice and a tbsp of finely minced garlic. Heat up enough oil depending on the amount of rice. Saut garlic until lightly brown. Add rice. Stir fry for few minutes until rice is well mixed and it absorbs the fragrance of the garlic. Season to taste with chicken seasoning powder. Just a little as we have well seasoned sauted sausages. Add sauted sausages with anchovies. Stir to mix well. Dish up.

Pinch Ground white pepper
Sugar (to taste)
Chili paste or chili powder (optional)
