Step:

  1. Heat water, vinegars and salt to boil, ready when salt is dissolved

  2. Add remaining ingredients to 6 quart jars. Stuff as much as possible.

  3. Fill the jars with brine to about 1/4 inch head room, then add the tops and then the rims, and close, but not too tightly.

  4. Process for 10 minutes in boiling water with at least 2 inches of water above the rims. Once done, let the jars sit, covered for 5 minutes. Remove the jars and let them sit, undistirbed for 24 hours. At this point, tighten lids and check the seals. Should be shelf stable for a year.


Ingredients

  1. 4 cups water
  2. 2 cups white vinegar
  3. 2 cups apple cider vinegar
  4. 1/3 cup salt
  5. 1 bulb crushed garlic per quart jar
  6. 6 black peppercorns per quart jar
  7. 6 whole coriander seeds per quart jar
  8. 1 sprig fresh dill per quart jar
  9. 1 jalepeno (slit to allow juice to penetrate) per quart jar
  10. Tons of pepperoncinis (slit to allow juice to penetrate)
