Step:
Cook the bacon until crispy on the stove top, save the leftover bacon fat and set aside. Once cooled down, chop the bacon into bite sized pieces.
Boil a pot of water and add eggs. Leave eggs in boiling water to cook for 7 minutes and then remove eggs from pot and place into a bowl of ice cold water to cool. Leave in cold water for at least 5 minutes or until theyre cooled down enough to touch. Set aside.
Meanwhile, heat a pot on the stove on medium heat. Add oil. Then add shallots, ginger, and garlic. Cook until onion is translucent about 5 minutes. Then add water and broth. Stir for 2 minutes
Next add in chili paste, sesame oil, soy sauce, and seasoning packets. Give it a good stir and up the heat to medium high for 3 minutes
Place single serving of the ramen bundle into a bowl, for each bowl. Take the broth mixture and pour over ramen. Cover the ramen with a plate or something to trap the steam in so the mixture can cook the ramen. About 7 minutes.
Add a healthy amount of green scallions, chopped bacon, eggs (cut in halves and deshelled), and sprinkle everything but the bagel seasoning over bowl to desired amount.
Lastly, drizzle some of the set aside bacon fat over the ramen to add a little extra flavor.
