Sieve together flour, cocoa powder, baking powder& soda in a big mixing bowl.
Keep it aside.
In another mixing bowl, add soft butter and brown sugar and beat with a hand mixer until fluffy.
Add in eggs, vanilla essence, mint powder and mix. For mint powder I sun dried some cleaned mint leaves and then grinded to make coarse powder.
Add in flour mixture, rolled oats and mix well to form soft dough like consistency.
Take a big piece of cooking dark chocolate and cut in small pieces to make 1/2 cup. You can also use dark chocolate chips instead. Or if you don't like dark chocolate, you can use milk chocolate or chips.
Lightly fold these chocolate pieces to the cookie mixture.
Keep this cookie dough in the refrigerator for 20 minutes. It will help to give the shape of the cookies easily.
Preheat oven at 170 degree C for 10 minutes.
Line a baking tray with baking paper or sheet.
Take out the cookie mixture from the refrigerator. Take a lemon size portion of the mixture, roll in between your palms and press it lightly to give cookie shape.
Place it in the baking tray. Make all the cookies like this and place in the tray with 2 inch gap between each cookie.
Bake them in preheated oven for 10-12 minutes or until a nice aroma of chocolate emits. The cookies will be soft when hot. They will be firm after cooling. So don't overbake them to make them firm.
Allow it to cool for few minutes. Transfer on wire rack or on cool surface and cool completely.
Delicious, healthy and flavourful minty dark chocolate oats cookies are ready now to enjoy. See the texture of the cookie. Soft from inside with little crunch from outside.
They can be easily stored in air tight container for about 10 days.

1/3 cup unsweetened Cocoa powder
2 medium sized Eggs
1/2 teaspoon Baking powder
1/2 teaspoon Baking soda
1 teaspoon dry Mint powder
1 teaspoon Vanilla essence
1 pinch Salt
