Step:
Soak chickpeas overnight or for 5 to 6 hours. Pressure cook them with little salt,1/4 th tsp baking soda and 1.5 cups water up to 4 whistles till done. Strain and mash or pulse once in a grinder till coarsely ground. Boil potatoes.Mash and mix in chickpeas. Add chopped onion, ginger paste and other dry masalas,kasoori methi, chopped coriander, few mint leaves, salt to taste and mix well.
Add chickpea flour for binding. If the mix is soft add breadcrumbs otherwise optional. Divide dough into balls approximately 10, flatten a little and refrigerate for an hour. Spread cornflour or maida in a plate. Toss each patty in it. Drizzle a grill pan with oil and grill all patties in it till crispy and brown. These taste great and can be served as it is as an appetizer.
For assembling: Slit the pav buns and butter them. Heat the grill pan and toast them lightly. Smear hot and sweet tomato sauce. Place a lettuce or capsicum slice. Place one chickpea patties on it. Arrange sliced cucumber,sliced onion, and tomato. Sprinkle some chaat masala. Top with some grated cheese. Place the other half-bun on it and secure it with a toothpick. Serve with tomato sauce and salad.
