Step:

  1. Coarsely grind pork shoulder, using the largest setting, and only passing through once. Use a cleaver or knife to repeatedly chop shrimp until it forms a course paste, with a few slightly larger chunks. You can optionally grind the shrimp, but we prefer there to be some noticeable chunks of shrimp. Optionally, for additional springiness of the shrimp, mix in 1/4 tsp baking powder into your shrimp paste before mixing with the rest of the ingredients.

  2. Knead all ingredients together, and use 1/2 tbsp or so to fill each wonton.

Ingredients

  1. 1/2 lb pork shoulder
  2. 1/2 lb peeled and deveined shrimp
  3. 1 tbsp soy sauce
  4. 1 tbsp oyster sauce
  5. 1/2 tsp sugar
  6. 1/2 tsp cornstarch
  7. 1 tsp sesame oil
  8. 1/4 tsp ground white pepper
  9. 1 scallion, finely minced
  10. Optional: 1/4 tsp baking soda
