Step:
Wash the Vegetables and keep aside.
Take a nonstick pan heat on add, cumin, coriander, fennel seeds, mustard seeds, black peppercorns roast on low flame for 3-4 minutes and then grind it keep aside.
Slit the bhindi and karela & prick baby potatoes and arbi.
Take a nonstick Tawa add 1 tbsp mustard oil add onion saute for 1 minutes add tomato and green chilli & ginger + Garlic paste & roasted spices powder stir well. Sprinkle coriender leaves.
Add salt, aamchur powder, garam masala, red chili powder, turmeric powder stir fry for 2-3 minutes.
Fill each the vegetables with this stuffing and place on the same tawa. Potato and arbi coat nicely into the mixture, drizzle 1 tbsp oil.
Cook on medium flame stir fry 10-12 minutes until crisp.
Serve with chapati.

4-5 Baby Potato, (Aloo), half boiled (halves)
Handful -Ladyfinger, (Bhindi)
2-3 Bitter gourd, (Karela)
2-3 Colocasia (Arbi)
2 Tomato, finely chopped
1 tbsp Ginger + Garlic paste
2 tbsp mustard oil
2 tbsp leaves Coriender
1 large onion, finely chopped
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1/2 tsp coriender seeds
1/2 tsp fennel seeds
3-4 black peppercorns
1 tsp aamchur powder
1 tsp red chili powder
1/2 tsp turmeric powder
1/2 tsp garam masala
to taste Salt
