Step:
Oil the bowl. Coat the dough and allow to sit undisturbed for about 30 minutes.
Season the meat and form into 4 patties. While the oven is preheating to 400 degrees Fahrenheit, let the patties get to room temperature.
Flour a surface and put the dough for the pockets on it. Divide into 4 equal amounts. Roll each one out one at a time.
Add a meat pattie into the center and fold the dough around the patties. Set folded side down on a lined oven safe pan. Repeat till done. Mix the egg and water. Add 3 slits into top of each pocket. Brush with egg wash.
When coated with egg wash sprinkle with kosher salt. Put into oven for 45 minutes. Check from time to time juices will build up so I had to drain the pan once.
After 30 minutes add shredded Parmesan on top and allow to melt for about 15 minutes in oven. Serve I hope you enjoy!!!!

1-1/3 pound ground sirloin
1 teaspoon salt
1 teaspoon ground black pepper
Pockets
1-1/2 cup all purpose flour plus extra for dusting
2 tablespoons extra virgin olive oil for coating dough
1 teaspoon salt
1 teaspoon granulated garlic powder
1 teaspoon granulated onion powder
1/2 cup hot tap water
1/2 cup finely grated Parmesan cheese
Wash
1 egg
2 tablespoons water
As needed kosher salt for sprinkling on top
4 teaspoon shredded Parmesan cheese
