Step:

  1. Mix the sauce ingredients thoroughly. It should be thin but not runny. Adjust with a little water if too thick

  2. Soak the dried mushrooms in some hot water if using

  3. Cut all the vegetables in 3-4 cm thin strips

  4. Boil the noodles according to instructions.

  5. Add the vegetables to the noodles in the boiling water in order of cooking time (use your experience... Celery takes longer than bean sprouts for example)

  6. Drain noodles and vegetables and toss with some vegetable oil and sesame oil to prevent sticking

  7. Divide into for bowls and drizzle the sauce over the noodles

  8. Let each guest mix well before eating. Serve with chilli oil, soy sauce and vinegar to taste

  10. 200 g vegetables (bean sprouts, leafy greens, carrots, cucumber,
  11. celery, chives, spring onion, peppers, dried mushrooms,...)
