Step:
In a pan add some oil and soften your shallot and 1 garlic clove, which you will then add to the meat misture in the next step.
In a bowl mix together your mince, 1 garlic cloves, shallot, spices, herbs, egg and breadcrumbs and scrunch together with your hands until everything is all mushed together and mixed in.
Shape your mixture into two patties and push one chunk of cheddar into the middle of each. And set aside
On a medium heat add your sliced red onion, garlic, sugar and cook until caramelised, when nearly reday add your mushrooms, but dont over cook them.
On a griddle pan cook your burgers for about 6 mins on each side.
Once one side of your burger is cooked turn over and add the mozarella so that it's nice and melted.
To serve spread some mustard on one side of your burger bun, mayo on the other and then put your pattie on, top with your onion, mushroom mix and add some gherkins.

2 soft white rolls
1 red onion
handful mushrooms
butter
2 garlic cloves minced
spoonfull of sugar
grated mozarella
2 small chunks of cheddar (for stuffing the burger)
