Starting with the dough. Measure one cup of body temperature water. Dissolve the yeast in the water. This means putting the yeast in water and break up the crumbs of yeast. with finger. The final product should be a muddy beige colour with no yeast chunks
In a mixing bowl, dump the flour and pour all the water on top of the flour. Use your hand to mix the flour and gradually incorporate all the water in the flour and all the flour with the water. See the mixing technique (ignore all the portion and up to 2:50 on this video) on this youtube vid. The dough should be the soft but not watery. Should be around the same softness and a bit more as pritikas cheeks.

Leave the dough under a mixing bowl for around 1 hour whilest making the filling
Medium heat. Oil in pan. Warm oil fry the onions till transparent. Add in celery, mushrooms, carrots, or optional zuchinni and stir for like 3 min.
Add in soy sause, white wine, salt and a teaspoon of oyster sause. wait 30 sec.
Then add in the meat. and cook it till it's all cooked.
Scoop everything out in another mixing bowl.
In another frying pan, scrabble eggs. and put the scrabbled eggs in the same mixing bowl. Mix everything in the mixing bowl.
Hopefully the dough is quite a bit larger than it was. crop the dough in half. Cut the dough in small pieces and roll out wraps.
Then wrap em as u guys know how
Fry them in oil for 1 min then put a cup of water in the pan and put on the lids. Then wait for at least 13 mins or the water entirely evaporates.

for the dough:
1 cups coffee mug full of warm water
5-10 grams dry active yeast
2 cups (coffee mugs) full of flour
for the fillings
100-150 g finely chopped meat
3 stalks celery finely chopped
1/2 carrot peeled finely chopped
1 onion finely chopped
1 stalk scallion/ green onion finely chopped
4 mushrooms finely chopped
1 thumb full of ginger
3-4 eggs
2 table spoons cooking wine (white wine would do)
1.5 table spoons soy sause
1.5 tea spoons of oyster sause optional
some salt
optional 1 stalk spinach or 1 addition small zuchinni if u want?
