Step:
Put a large hob pan onto a high heat with the oil, add the pork and seal on all sides for 5 mins, remove from the pan and set aside on a plate.
Add the onion, garlic and red pepper into the pan and juices and soften for 3/4 mins. Add the garlic and stir.
Add the butter beans and bring to the boil, reduce heat to medium. Add the pesto and stir.
Return the pork and any resting juices to the pan and let nestle between the beans, but allow the pork to brown by touching the base of the pan.
Cover with a pan lid and cook for around 15-20 mins turning throughout until it is cooked through. After about 12 mins add the Pak Choi so it still has some bite to it when served.
Let the pork rest for a few minutes and turn the beans out onto a platter. sit the pork on top and scatter with herbs and feta.

1 can butter beans in water
1/2 red pepper
1 red onion
1 pak choi (or spring greens)
2 tbsp red pesto
1/4 pack feta
1 garlic clove
salt and pepper
rapeseed oil
fresh herbs of choice, basil, coriander, mint or parsely
