Step:
Chop spring garlic, coriendar leaves onions and tomatoes finely. Boil eggs and peel.
Take one tbsp oil in a nonstick pan. Heat it a bit on low flame. Gently break an egg over it and Sprinkle the powder spices evenly. Top it up with a tbsp full spring garlic. Recover the hot oil around egg and pour over the toppings on it in order to cook the topping. Take it out in a plate and make another fry similarly.
Heat oil on a big size roti tava. Fry onions till a bit brown and then tomatoes. Try to mash them as you fry. Add ginger garlic chilli paste and all the other powder spices. Fry and mash with a masher.
Grate boiled eggs when everything is mashed and fried with oil oozing out. Add a little more oil if the mixture looks too dry. Add 1 cup water and mix well. Bring it to boil. Move the mixture on aside. Take another spoonful of oil and fry spring garlic a bit. Add a half or full cup of water depending on the dryness of the gravy. Add a pinch of salt and bring it to boil. Bring down the gravy to mix in this boiling water. Mix well.
Divide this gravy into 2 portions and pour over the two half fries. Using the spoon itself break the half fry into tiniest pieces while mixing in the gravy. Do the same with the second serving. Serve hot with lightly toasted bread/bun, chopped onions and lemon. Note: ghotalo is usually served in a big plate.
