Step:

  1. Toast the bread both sides. Slice the spam thinly.

  2. Fry the spam in a hot skillet. Turn as needed. Make sure to take care to barely get it crisp. Just a very good caramelization, to much crisp makes it taste totally different. When done set aside.

  3. The sauerkraut should be drained a bit. You will fry this till just starting to caramelize. Gather the sauce ingredients. Put the mayonnaise, ketchup, mustard and relish in a bowl.

  4. Mix the sauce. Spread some on each slice of bread. Then on one slice of bread, stack the fried spam on it.

  5. Add the cheese and sauerkraut. Stack the sandwich. Cut in half and serve with the peppers and pickles if you desire. I hope you enjoy!!

  1. Sandwich
  2. 6 ounces spam
  3. 4 slices swiss cheese
  4. 2/3 cup sauerkraut
  5. 2 slices bread
  6. Sauce
  7. 1/3 cup mayonnaise
  8. 1-1/2 tablespoons Heinz tomato ketchup
  9. 1 tablespoon sweet pickle relish
  10. 1 teaspoon yellow prepared mustard
  11. Garnish optional
  12. To taste kosher pickle spears
  13. To taste Greek banana peppers
