Starting in a big, COLD pot, pour in your milk and beat the yolks, sugar, vanilla, salt and cornstarch into the milk until well combined. Turn the heat on to medium-med/high heat and stir constantly until it comes to a boil. You have to babysit this but its worth it. Once it boils pull it off the heat. Itll overflow really quick if you dont take it off soon enough. Let it boil then pull it off.
Beat your egg whites to a soft peak and temper them with a little of the hot custard, then pour them into the pot and whisk well.
Ladle some Into a cup and enjoy! Spike it with rumchata if youre feeling frisky!!

1/2 gallon whole milk
4 jumbo eggs, separated
1 1/3 cup sugar
Big splash of vanilla
2-3 tbsp cornstarch OR flour, smoothed out in some cold milk
