Step:

  1. Preheat oven to 375. Combine the onion, bread cubes, tomatoes and olives on a rimmed baking sheet. Sprinkle with S&P. Drizzle with 2Tbsp of olive oil and toss everything together. Disperse evenly all over baking sheet and bake for 12-15 minutes, bread should be crisp.

  2. In a medium bowl, toss the shrimp with 1 Tbsp olive oil and 1/2 tsp salt. Arrange them among the bread mixture on the baking sheet. Bake for 8-10 minutes.

  3. Meanwhile, whisk together the remaining 1 Tbsp olive oil, vinegar and anchovy in a small bowl. Stir in capers and set aside.

  4. Remove baking sheet from the oven. Add the parsley and dressing and toss to coat everything. Transfer to a platter and garnish with chopped parsley. Add parmesan shavings. Serve.

  4. 1/2 C pitted Nicoise olives
  5. 1/2 tsp salt, plus more, 1/2 tsp pepper
  6. 4 Tbsp olive oil
  7. 2 # jumbo shrimp, peeled and deveined
  8. 2 Tbsp red wine vinegar
  9. 1 anchovy, minced
  10. 1/3 C fresh parsley, plus 2 Tbsp, chopped
  11. 1 Tbsp capers, drained
  12. Parmesan shavings for garnish
